We being crafting our Rosetto by picking the grapes, in the early morning, to ensure the fruit remains cool. We separate the skins from the juice right after crusing and prior to pressing the wine. After pressing the fruit is then transferred to stainless stell tanks where it is innoculated with Cote do Blanc yeast and ages until bottling. By fermenting and aging in stainless steel we retain the fresh fruit flavor of our Pinot Rosetto.
This wine leads with bright fresh strawberry fruit. It has delicate floral aromas mixed with strawberry. On the palate this wine is light yet very well balanced. It has a slight natural sweetness that leads to a bright finish. Our Rosetto is wonderful with assorted cheeses, summer salds, grilled shrimp, grilled chicken and light appetizers.
