Our Estate Cabernet Sauvignon fruit was harvested in the very early morning and destemmed, and the whole berries were fermented with Pasteur Red yeast at 85 degrees F. The fruit was punched down twice daily and pumped over three times each day until it reached dryness. Upon completion of pressing, it was racked once and placed in small French oak barrels to age for 24 months. The wine was then racked three more times during the barrel aging process and received 24 months bottle age prior to release. The 2018 Cabernet Sauvignon has aromas of cassis, toasty oak and berry. This wine pairs very well with short ribs, braised meats. vegetable lasagna, grilled steak, and marinara based pasta dishes.
