We describe our Cabernet Franc as having spicy floral notes of violets followed by medium body and tannins. The Cabernet Franc is a new wine in our portfolio. Grown in the Napa Valley near a location called Wooden Valley, it is warmer there than Carneros and the grapes thrive in the warmer location. The fruit was harvested at 24.3 degrees Brix. The grapes were destemmed and the the berries and free run juice were fermented at 85 degrees for about 9 days. After pressing gently at near dryness, the wine was racked two times and aged in small French oak barrels for about 18 months. Pair the Cabernet Franc with roast chicken, pork tenderloin, grilled beef, duck, sausage, and hearty fish dishes.
